Blackened Catfish

Mmmmmm! Is there anything better than some New Orleans style blackened Catfish?!?

Ingredients (serves 6)

6 catfish fillets

1 cup unsalted butter, melted

Leo's Amazing! Everything Blackened


1. Heat a large cast iron skillet (recommended) or heavy aluminum skillet over high heat for 10 minutes.

2. Dip catfish into melted butter and coat both sides of fish with Leo's Amazing! Everything Blackened, using about 1 teaspoon of spice for each fillet.

3. Place fish on waxed paper.

4. Place 3 fillets at a time in hot skillet.

5. Drizzle each fillet with 1 teaspoon of melted butter.

6. Cook over high heat about 2-3 minutes per side or until fish flakes easily.

7. Serve immediately.
